Description

Ingredients

  • 8 oz rice noodles
  • 1 lb boneless skinless chicken thighs, sliced
  • 2 large eggs
  • 1 cup bean sprouts
  • 3 green onions, sliced
  • 1/4 cup crushed peanuts
  • 1 lime, cut into wedges
  • 2 tbsp tamarind paste
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 2 tbsp vegetable oil

Instructions

  1. Heat a wok or large skillet over medium high heat.
  2. In a bowl mix tamarind paste, soy sauce, and brown sugar until smooth.
  3. Add vegetable oil to the hot wok.
  4. Add sliced chicken and cook until lightly golden.
  5. Push chicken to one side and scramble the eggs in the pan.
  6. Add soaked rice noodles and pour in the prepared sauce.
  7. Toss everything together until the noodles soften and absorb the sauce.
  8. Stir in bean sprouts and green onions and cook briefly.
  9. Serve topped with crushed peanuts and lime wedges.

Notes

  • Soak rice noodles in warm water instead of boiling to prevent overcooking.
  • Prepare ingredients before cooking since stir frying happens quickly.
  • Add lime juice just before serving for fresh flavor.
