- 2 cups diced chicken breast
- 1 cup sliced carrots
- 1 cup chopped green beans
- 1 cup diced potatoes
- 1 medium chopped onion
- 3 cloves minced garlic
- 6 cups chicken broth
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Heat a large pot over medium heat.
- Add olive oil, then sauté onion and garlic until fragrant.
- Add chicken pieces and cook until they start to turn white.
- Add carrots, green beans, potatoes, and pour in chicken broth.
- Let simmer for 25 minutes until vegetables are tender and chicken is cooked.
- Season with salt and pepper, then stir in fresh parsley.
