- 3 cups rolled oats
- 1 cup coconut flakes
- 1 cup mixed nuts, chopped
- 3 tablespoons sesame seeds
- 1/3 cup maple syrup or honey
- 1/4 cup coconut oil
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup dried cranberries or raisins
Instructions
- Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
- In a large bowl, mix oats, nuts, sesame seeds, coconut flakes, and salt.
- In a separate bowl, whisk together coconut oil, maple syrup, and vanilla extract. Pour over dry ingredients and stir until coated.
- Spread granola evenly on the prepared baking sheet, keeping clusters roughly the same size.
- Bake for 20–25 minutes, stirring halfway through, until golden brown.
- Remove from oven and let cool completely on the baking sheet.
- Add dried fruits after cooling. Serve or store in an airtight container.
