Ingredients

- 2 tablespoons gelatin powder
- 1 cup granulated sugar
- 1 cup water
- 1 teaspoon vanilla extract
- 1/2 cup cornstarch
- 1/2 cup powdered sugar
- a few drops food coloring
Instructions
- Lightly grease a square pan and dust with cornstarch.
- In a saucepan, combine water, sugar, and gelatin. Let sit to bloom.
- Heat gently over low heat, stirring until fully dissolved.
- Remove from heat, add vanilla extract, and whisk until slightly fluffy.
- Divide mixture and add food coloring if desired.
- Pour into prepared pan and smooth the top.
- Let set at room temperature for several hours.
- Dust with powdered sugar and cut into cubes.
Notes
- Do not overheat the mixture to keep it light and fluffy
- Use fresh gelatin for best results
- Dust generously with powdered sugar to prevent sticking
