Creamy Dan Dan noodles tossed in a rich sesame chili sauce and topped with savory ground meat, green onions, peanuts, and tender bok choy.
Ingredients

- 8 ounces wheat noodles
- 1/2 pound ground meat
- 3 tablespoons sesame paste or tahini
- 2 tablespoons soy sauce
- 2 tablespoons chili oil
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1/2 cup chicken broth
- 2 tablespoons green onions, chopped
- 2 tablespoons crushed peanuts
- 2 small heads bok choy
Instructions
- Bring a large pot of salted water to a boil.
- Cook wheat noodles according to package instructions and reserve a little noodle water.
- In a bowl mix sesame paste, soy sauce, chili oil, garlic, ginger, and chicken broth.
- Heat a skillet over medium heat and cook the ground meat until browned.
- Add cooked noodles to a bowl and toss with the sauce and a splash of noodle water.
- Top noodles with cooked meat, bok choy, green onions, and crushed peanuts.
- Serve immediately while hot.
Notes
- Reserve noodle water to adjust sauce consistency.
- Adjust chili oil to control spice level.
- Fresh noodles provide the best texture.
