Description

Creamy Dan Dan noodles tossed in a rich sesame chili sauce and topped with savory ground meat, green onions, peanuts, and tender bok choy.


Ingredients

  • 8 ounces wheat noodles
  • 1/2 pound ground meat
  • 3 tablespoons sesame paste or tahini
  • 2 tablespoons soy sauce
  • 2 tablespoons chili oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1/2 cup chicken broth
  • 2 tablespoons green onions, chopped
  • 2 tablespoons crushed peanuts
  • 2 small heads bok choy

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Cook wheat noodles according to package instructions and reserve a little noodle water.
  3. In a bowl mix sesame paste, soy sauce, chili oil, garlic, ginger, and chicken broth.
  4. Heat a skillet over medium heat and cook the ground meat until browned.
  5. Add cooked noodles to a bowl and toss with the sauce and a splash of noodle water.
  6. Top noodles with cooked meat, bok choy, green onions, and crushed peanuts.
  7. Serve immediately while hot.

Notes

  • Reserve noodle water to adjust sauce consistency.
  • Adjust chili oil to control spice level.
  • Fresh noodles provide the best texture.
