Ingredients

- 500 g ground chicken
- 3 garlic cloves minced
- 1 tablespoon grated ginger
- 2 green onions chopped
- 1 large egg
- 1/3 cup breadcrumbs
- 400 ml coconut milk
- 2 tablespoons red curry paste
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1/4 cup chopped cilantro
- 1 red chili sliced
- 2 cups cooked white rice
Instructions
- In a bowl combine ground chicken, garlic, ginger, green onions, egg, and breadcrumbs.
- Form small meatballs from the mixture.
- Heat a skillet over medium heat and lightly oil it.
- Add the meatballs and cook until lightly browned.
- Add coconut milk and red curry paste to the pan.
- Simmer gently until the meatballs are cooked through.
- Stir in soy sauce and lime juice.
- Serve the meatballs with sauce over warm white rice.
- Garnish with cilantro and sliced red chili.
Notes
- Do not boil the coconut milk too aggressively.
- Use fresh herbs for the best flavor.
- Add vegetables like bell peppers or spinach if desired.
