Description

Tender chicken meatballs simmered in a creamy Thai inspired coconut curry sauce and served over fluffy rice.


Ingredients

  • 500 g ground chicken
  • 3 garlic cloves minced
  • 1 tablespoon grated ginger
  • 2 green onions chopped
  • 1 large egg
  • 1/3 cup breadcrumbs
  • 400 ml coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1/4 cup chopped cilantro
  • 1 red chili sliced
  • 2 cups cooked white rice

Instructions

  1. In a bowl combine ground chicken, garlic, ginger, green onions, egg, and breadcrumbs.
  2. Form small meatballs from the mixture.
  3. Heat a skillet over medium heat and lightly oil it.
  4. Add the meatballs and cook until lightly browned.
  5. Add coconut milk and red curry paste to the pan.
  6. Simmer gently until the meatballs are cooked through.
  7. Stir in soy sauce and lime juice.
  8. Serve the meatballs with sauce over warm white rice.
  9. Garnish with cilantro and sliced red chili.

Notes

  • Do not boil the coconut milk too aggressively.
  • Use fresh herbs for the best flavor.
  • Add vegetables like bell peppers or spinach if desired.
