- 1 can coconut milk
- 2 tablespoons red curry paste
- 3 garlic cloves, minced
- 1 tablespoon grated ginger
- 2 tablespoons lime juice
- 1 tablespoon fish sauce
- 1 tablespoon olive oil
- 2 green chilies, sliced
- 2 tablespoons fresh herbs
- Salt and pepper to taste
Instructions
- Heat a skillet over medium heat.
- Mix coconut milk, curry paste, garlic, and ginger.
- Add oil to the skillet.
- Sear cod lightly, then add the sauce.
- Simmer for 8 to 10 minutes.
- Add lime juice, fish sauce, and herbs.
- Serve warm.
