- 1/2 cup peanut butter
- 1 can coconut milk (400 ml)
- 3 cups vegetable broth
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon red curry paste
- 1 cup carrots, sliced
- 1 cup bell pepper, sliced
- 1 tablespoon olive oil
- 1/2 teaspoon chili flakes
- Salt and pepper to taste
- Chopped peanuts and cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add garlic and ginger, sauté until fragrant.
- Stir in red curry paste and peanut butter until combined.
- Pour in coconut milk and vegetable broth, mix well.
- Add carrots and bell pepper and simmer for 15 to 20 minutes.
- Stir in soy sauce and lime juice, adjust seasoning.
- Serve hot, garnished with chopped peanuts and cilantro.
Notes
- Use full-fat coconut milk for best texture
- Add lime juice at the end for brightness
