Ingredients

  • 1/2 cup peanut butter
  • 1 can coconut milk (400 ml)
  • 3 cups vegetable broth
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon red curry paste
  • 1 cup carrots, sliced
  • 1 cup bell pepper, sliced
  • 1 tablespoon olive oil
  • 1/2 teaspoon chili flakes
  • Salt and pepper to taste
  • Chopped peanuts and cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add garlic and ginger, sauté until fragrant.
  3. Stir in red curry paste and peanut butter until combined.
  4. Pour in coconut milk and vegetable broth, mix well.
  5. Add carrots and bell pepper and simmer for 15 to 20 minutes.
  6. Stir in soy sauce and lime juice, adjust seasoning.
  7. Serve hot, garnished with chopped peanuts and cilantro.
