- 300 grams shrimp, peeled and deveined
- 200 grams mushrooms, sliced
- 4 cups chicken broth
- 1 cup coconut milk
- 2 stalks lemongrass, smashed
- 4 kaffir lime leaves
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 tablespoon chili paste
- 3 cloves garlic, minced
- 2 tablespoons fresh cilantro, chopped
Instructions
- Place a large pot over medium heat.
- Add chicken broth, lemongrass, garlic, and lime leaves, then simmer for 5 minutes.
- Add mushrooms and chili paste, stirring well.
- Add shrimp and cook until pink and tender.
- Stir in coconut milk, fish sauce, and lime juice.
- Ladle into bowls and garnish with fresh cilantro before serving.
Notes
- Add lime juice at the end for best flavor
- Do not overcook shrimp
- Adjust spice level to taste
