Description
A soft and silky Thai pandan jelly dessert served with creamy coconut milk and sesame seeds, refreshing and lightly sweet.
Ingredients

- 1 cup rice flour
- 1/2 cup tapioca starch
- 2 cups pandan juice
- 3/4 cup sugar
- 1/2 teaspoon salt
- 2 cups coconut milk
- 2 tablespoons sesame seeds
Instructions
- Mix rice flour, tapioca starch, sugar, salt, and pandan juice until smooth.
- Pour into a saucepan and cook over medium heat.
- Stir continuously until thick and glossy.
- Transfer into a greased tray and spread evenly.
- Let cool completely, then cut into pieces.
- Serve with coconut milk and sprinkle sesame seeds.
Notes
- Stir constantly to avoid lumps
- Use fresh pandan for best flavor
- Cool completely before cutting
