Description

A soft and silky Thai pandan jelly dessert served with creamy coconut milk and sesame seeds, refreshing and lightly sweet.


Ingredients

Scale
  • 1 cup rice flour
  • 1/2 cup tapioca starch
  • 2 cups pandan juice
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 2 cups coconut milk
  • 2 tablespoons sesame seeds

Instructions

  1. Mix rice flour, tapioca starch, sugar, salt, and pandan juice until smooth.
  2. Pour into a saucepan and cook over medium heat.
  3. Stir continuously until thick and glossy.
  4. Transfer into a greased tray and spread evenly.
  5. Let cool completely, then cut into pieces.
  6. Serve with coconut milk and sprinkle sesame seeds.

Notes

  • Stir constantly to avoid lumps
  • Use fresh pandan for best flavor
  • Cool completely before cutting
