Description

A rich and savory Asian fried rice dish made with salted duck egg yolks, garlic, scallions, and fluffy day-old rice, perfect as a comforting main or side dish.


Ingredients

  • 4 raw salted duck eggs
  • 2 cups cooked rice (preferably day-old, refrigerated)
  • 1/4 teaspoon salt
  • 1 tablespoon cooking oil, divided
  • 2 chicken eggs, beaten
  • 1 tablespoon minced garlic
  • 1 teaspoon soy sauce
  • 12 scallion stalks, thinly sliced
  • Black pepper to taste
  • Pinch of turmeric powder (optional)

Instructions

  1. Boil salted duck eggs for about 12 minutes, then peel and discard the whites. Alternatively, separate the yolks from raw eggs and steam them.
  2. Mash the salted egg yolks finely with a fork or press them through a sieve. Set aside.
  3. Mix rice with turmeric powder, salt, and 1 teaspoon of oil to separate the grains.
  4. Heat 1/2 teaspoon oil in a pan over medium heat, add beaten chicken eggs, scramble briefly until runny, then remove from pan. Set aside.
  5. Add the remaining oil to the pan over medium-high heat. Add garlic and sauté until fragrant.
  6. Add rice and stir-fry for about a minute, breaking up clumps.
  7. Stir in the mashed salted yolks and toss until every grain is coated evenly.
  8. Add soy sauce and stir quickly to combine with the rice.
  9. Return scrambled eggs, breaking them into small bits, and toss with the rice for a few seconds.
  10. Sprinkle black pepper and scallions, mix well, and serve hot.

Notes

  • Use day-old rice for the best texture; freshly cooked rice may clump.
  • Salted duck eggs provide a richer taste than chicken eggs.
  • Adjust soy sauce and salt carefully since the yolks are already salty.
  • For added protein, include shrimp, chicken, or tofu.
  • Best served immediately for optimal flavor and aroma.
