- 1 1/2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
- 8 scallions, thinly sliced and divided
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, finely grated
- 1 tablespoon olive oil
- 8 cups low-sodium chicken broth
- 2 medium Yukon gold potatoes, peeled and diced small
- 2 stalks celery, diced
- 2 medium carrots, diced
- 3 cups baby spinach
- 1 tablespoon soy sauce
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper
- 1 tablespoon lemon juice
Instructions
- Place a large soup pot or Dutch oven over medium heat and let it warm for about 1 minute.
- Gather the chicken, scallions, garlic, ginger, potatoes, celery, carrots, broth, soy sauce, salt, pepper, spinach, and lemon juice so everything is ready to use.
- Add the olive oil to the pot, then sauté half of the scallions, the garlic, and the ginger for 1 to 2 minutes until fragrant.
- Add the chicken, potatoes, celery, carrots, chicken broth, soy sauce, salt, and black pepper. Stir gently to combine.
- Bring the soup to a gentle simmer, then reduce the heat to medium-low and cook for 20 to 25 minutes, until the chicken is cooked through and the potatoes are tender.
- Stir in the baby spinach and lemon juice, then cook for 2 more minutes until the spinach is wilted. Taste and adjust seasoning if needed.
- Ladle into bowls and top with the remaining scallions before serving hot.
