Description

A light yet comforting bowl of scallion chicken soup made with tender chicken, fresh scallions, potatoes, carrots, celery, spinach, and a fragrant ginger garlic broth. It is cozy, nourishing, and perfect for an easy lunch or dinner.

  • 1 1/2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
  • 8 scallions, thinly sliced and divided
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, finely grated
  • 1 tablespoon olive oil
  • 8 cups low-sodium chicken broth
  • 2 medium Yukon gold potatoes, peeled and diced small
  • 2 stalks celery, diced
  • 2 medium carrots, diced
  • 3 cups baby spinach
  • 1 tablespoon soy sauce
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice

Instructions

  1. Place a large soup pot or Dutch oven over medium heat and let it warm for about 1 minute.
  2. Gather the chicken, scallions, garlic, ginger, potatoes, celery, carrots, broth, soy sauce, salt, pepper, spinach, and lemon juice so everything is ready to use.
  3. Add the olive oil to the pot, then sauté half of the scallions, the garlic, and the ginger for 1 to 2 minutes until fragrant.
  4. Add the chicken, potatoes, celery, carrots, chicken broth, soy sauce, salt, and black pepper. Stir gently to combine.
  5. Bring the soup to a gentle simmer, then reduce the heat to medium-low and cook for 20 to 25 minutes, until the chicken is cooked through and the potatoes are tender.
  6. Stir in the baby spinach and lemon juice, then cook for 2 more minutes until the spinach is wilted. Taste and adjust seasoning if needed.
  7. Ladle into bowls and top with the remaining scallions before serving hot.

  • Add the scallions in two stages for deeper flavor and a fresher finish.
  • Keep the soup at a gentle simmer so the chicken stays tender and the broth remains clear.
