Ingredients
Scale
- 1 pound ripe peaches (about 3 medium)
- 1/2 cup honey
- 8 cups filtered water
- 8 black tea bags
- 1 large lemon, sliced into rounds
- 1/2 cup packed fresh mint leaves, plus more to serve
Instructions
- Finely dice 2 peaches and combine them with honey and 1 cup of water in a saucepan.
- Bring the mixture to a boil, stirring to dissolve honey and mash the peaches.
- Reduce heat and simmer for 5 minutes. Remove from heat and cool to room temperature.
- Strain the peach syrup through a fine mesh strainer to remove solids.
- In another pot, bring 4 cups of water to a boil. Remove from heat and steep tea bags for 8 minutes. Let cool.
- Combine the strained syrup and cooled tea in a large pitcher. Add remaining 3 cups of water.
- Slice the remaining peach and add to the pitcher with remaining lemon slices and mint.
- Refrigerate for at least 4 hours or overnight for best flavor.
- To serve, pour over ice and garnish with citrus wheels and mint leaves.
Notes
- Use very ripe peaches for maximum flavor.
- You can substitute honey with agave syrup for a vegan option.
- Chill the tea overnight for stronger infusion.
- Freeze leftover tea in ice cubes to keep it cold without dilution.
