- 3 cups cooked white rice (chilled)
- 1 pound shrimp (peeled and deveined)
- 2 large eggs (beaten)
- 1 cup diced carrots
- 1 cup chopped green onions
- 3 cloves garlic (minced)
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil
- 1 cup peas
Instructions
- Heat a large skillet or wok over medium high heat.
- Beat eggs in a bowl and set aside.
- Add oil and cook shrimp until pink, then remove.
- Sauté garlic, carrots, and peas in the same pan.
- Push vegetables aside, scramble eggs, then mix with rice and soy sauce.
- Add shrimp back, drizzle sesame oil, and toss everything.
- Serve hot and enjoy.
