Description

Ingredients

  • 3 cups cooked white rice (chilled)
  • 1 pound shrimp (peeled and deveined)
  • 2 large eggs (beaten)
  • 1 cup diced carrots
  • 1 cup chopped green onions
  • 3 cloves garlic (minced)
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 1 cup peas

Instructions

  1. Heat a large skillet or wok over medium high heat.
  2. Beat eggs in a bowl and set aside.
  3. Add oil and cook shrimp until pink, then remove.
  4. Sauté garlic, carrots, and peas in the same pan.
  5. Push vegetables aside, scramble eggs, then mix with rice and soy sauce.
  6. Add shrimp back, drizzle sesame oil, and toss everything.
