Description

A vibrant smashed carrot salad with roasted carrots, peppery greens, and a bright, tangy dressing.


Ingredients

Scale
  • 5 medium carrots
  • 2 cups arugula
  • 1 small red onion
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 1 garlic clove
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F.
  2. Toss carrots with olive oil, salt, and pepper.
  3. Spread on a baking sheet and roast for 20 minutes.
  4. Remove and gently smash each carrot.
  5. Return to oven and roast 5 more minutes.
  6. Mix lemon juice, honey, and garlic.
  7. Toss carrots with arugula and onion, then add dressing.

Notes

  • Do not overcrowd the baking sheet
  • Add greens just before serving
  • Adjust seasoning to taste
