A vibrant smashed carrot salad with roasted carrots, peppery greens, and a bright, tangy dressing.
Ingredients

- 5 medium carrots
- 2 cups arugula
- 1 small red onion
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon honey
- 1 garlic clove
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 400°F.
- Toss carrots with olive oil, salt, and pepper.
- Spread on a baking sheet and roast for 20 minutes.
- Remove and gently smash each carrot.
- Return to oven and roast 5 more minutes.
- Mix lemon juice, honey, and garlic.
- Toss carrots with arugula and onion, then add dressing.
Notes
- Do not overcrowd the baking sheet
- Add greens just before serving
- Adjust seasoning to taste
