Description

A creamy and flavorful Thai soup made with coconut milk, chicken, mushrooms, and a bright touch of lime and spice.


Ingredients

  • 300 grams chicken breast, sliced
  • 400 ml coconut milk
  • 2 cups chicken broth
  • 1 cup mushrooms, sliced
  • 1 to 2 red chili, sliced
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon ginger, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Heat a large pot over medium heat.
  2. Add chicken broth, ginger, and garlic, then bring to a gentle simmer.
  3. Stir in coconut milk slowly.
  4. Add chicken, mushrooms, and chili slices.
  5. Simmer for 10 to 15 minutes until chicken is cooked.
  6. Stir in lime juice and fish sauce.
  7. Serve hot with fresh cilantro.

Notes

  • Do not boil the soup to keep coconut milk smooth.
  • Add lime juice at the end for best flavor.
  • Adjust spice level by adding more or less chili.
