- 300 grams chicken breast, sliced
- 400 ml coconut milk
- 2 cups chicken broth
- 1 cup mushrooms, sliced
- 1 to 2 red chili, sliced
- 2 tablespoons lime juice
- 1 tablespoon fish sauce
- 1 tablespoon ginger, sliced
- 2 cloves garlic, minced
- 2 tablespoons fresh cilantro, chopped
Instructions
- Heat a large pot over medium heat.
- Add chicken broth, ginger, and garlic, then bring to a gentle simmer.
- Stir in coconut milk slowly.
- Add chicken, mushrooms, and chili slices.
- Simmer for 10 to 15 minutes until chicken is cooked.
- Stir in lime juice and fish sauce.
- Serve hot with fresh cilantro.
Notes
- Do not boil the soup to keep coconut milk smooth.
- Add lime juice at the end for best flavor.
- Adjust spice level by adding more or less chili.
