Description

  • 1 1/2 pounds boneless, skinless chicken thighs, sliced into bite-size pieces
  • 4 cups green cabbage, roughly chopped
  • 6 scallions, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, finely grated
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon oyster sauce
  • 2 teaspoons sesame oil
  • 1/2 cup chicken broth
  • 2 teaspoons cornstarch
  • 1 tablespoon water
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon salt, or to taste
  • 1 teaspoon neutral oil

Instructions

  1. Preheat a large skillet or wide pan with a lid over medium heat for 1 to 2 minutes.
  2. In a medium bowl, whisk together the soy sauce, oyster sauce, sesame oil, chicken broth, white pepper, and salt.
  3. In a small cup, stir the cornstarch with the water until smooth, then whisk it into the sauce mixture.
  4. Add the neutral oil to the pan and spread the chopped cabbage across the bottom in an even layer.
  5. Scatter half of the garlic and ginger over the cabbage.
  6. Arrange the sliced chicken evenly over the cabbage, then top with the remaining garlic and ginger.
  7. Pour the prepared sauce over everything and sprinkle half of the scallions on top.
  8. Cover the pan and cook over medium-low heat for 14 to 16 minutes, or until the chicken is fully cooked and the cabbage is tender.
  9. Uncover for the last 1 to 2 minutes if needed to let the sauce thicken slightly.
  10. Taste and adjust salt if needed, then top with the remaining scallions and serve hot.

Notes

  • Chicken thighs stay especially juicy, but chicken breast can be used if cooked carefully.
  • Green cabbage works beautifully, though napa cabbage is a softer alternative.
  • Serve with steamed rice or noodles to soak up the savory sauce.
