- 500 g boneless skinless chicken breast, cut into bite sized pieces
- 3/4 cup roasted unsalted cashews
- 1 large red bell pepper, sliced
- 1 medium carrot, thinly sliced
- 3 cloves garlic, minced
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon cornstarch
- 1/2 cup water
- 1 teaspoon sesame oil
- 2 tablespoons vegetable oil
- 2 green onions, sliced
Instructions
- Heat a large skillet or wok over medium high heat.
- In a bowl mix soy sauce, oyster sauce, water, sesame oil, and cornstarch until smooth.
- Add vegetable oil to the hot skillet.
- Add the chicken pieces and cook about 5 minutes until lightly golden.
- Add garlic, bell pepper, and carrot and stir fry for 3 to 4 minutes.
- Pour the prepared sauce into the skillet and stir well.
- Add the roasted cashews and cook until the sauce thickens.
- Garnish with sliced green onions and serve hot.
Notes
- Prepare all ingredients before starting since stir frying cooks quickly.
- Keep the heat fairly high for the best flavor.
- Add the cashews near the end to maintain their crunch.
