- 4 cups shredded green or napa cabbage
- 2 cups shredded red cabbage
- 1 cup shredded carrots
- 1 red bell pepper, thinly sliced
- 3 green onions, chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint leaves, chopped (optional)
- 1/4 cup chopped peanuts or cashews (for garnish)
- 1 tablespoon sesame seeds (optional)
- 1/4 cup creamy peanut butter (or almond butter)
- 3 tbsp lime juice (freshly squeezed)
- 1 tbsp rice vinegar
- 2 tbsp soy sauce or tamari
- 1 tbsp honey or maple syrup
- 2 tsp sesame oil
- 1 garlic clove, minced
- 1 tsp grated fresh ginger
- 2–3 tbsp water (to thin dressing as needed)
Instructions
- In a large bowl, combine shredded chicken, green and red cabbage, carrots, bell pepper, green onions, cilantro, and mint. Toss lightly to mix.
- In a medium bowl, whisk together peanut butter, lime juice, rice vinegar, soy sauce, honey, sesame oil, garlic, and ginger. Add water as needed until the dressing is smooth and pourable.
- Pour the dressing over the salad and toss until well coated.
- Garnish with chopped peanuts/cashews and sesame seeds.
- Serve immediately or chill for 20 minutes to let the flavors meld.
