  • 4 cups shredded cooked chicken (rotisserie or poached)
  • 4 cups shredded green or napa cabbage
  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 3 green onions, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint leaves, chopped (optional)
  • 1/4 cup chopped peanuts or cashews (for garnish)
  • 1 tablespoon sesame seeds (optional)
  • 1/4 cup creamy peanut butter (or almond butter)
  • 3 tbsp lime juice (freshly squeezed)
  • 1 tbsp rice vinegar
  • 2 tbsp soy sauce or tamari
  • 1 tbsp honey or maple syrup
  • 2 tsp sesame oil
  • 1 garlic clove, minced
  • 1 tsp grated fresh ginger
  • 23 tbsp water (to thin dressing as needed)

Instructions

  1. In a large bowl, combine shredded chicken, green and red cabbage, carrots, bell pepper, green onions, cilantro, and mint. Toss lightly to mix.
  2. In a medium bowl, whisk together peanut butter, lime juice, rice vinegar, soy sauce, honey, sesame oil, garlic, and ginger. Add water as needed until the dressing is smooth and pourable.
  3. Pour the dressing over the salad and toss until well coated.
  4. Garnish with chopped peanuts/cashews and sesame seeds.
  5. Serve immediately or chill for 20 minutes to let the flavors meld.

  • Use rotisserie chicken for a quicker prep option.
  • For a vegan version, substitute tofu for chicken and maple syrup for honey.
