Description

A fresh and crunchy Thai-inspired chopped salad with tender chicken and a creamy peanut dressing.


Ingredients

  • 2 cups cooked chicken, sliced
  • 2 cups shredded green cabbage
  • 2 cups chopped romaine lettuce
  • 1 cup diced red bell pepper
  • 3 green onions, sliced
  • 1 cup shredded carrots
  • 1/3 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 2 to 4 tablespoons water

Instructions

  1. Prepare all vegetables by chopping and shredding as needed.
  2. Slice cooked chicken into thin strips.
  3. In a large bowl, combine cabbage, lettuce, carrots, bell pepper, and green onions.
  4. In a separate bowl, whisk peanut butter, soy sauce, lime juice, honey, garlic, and water until smooth.
  5. Add chicken to the vegetable mixture.
  6. Pour dressing over salad and toss gently to combine.
  7. Serve immediately.
