- 3 tablespoons water
- 3 tablespoons oil
- 2 cloves garlic, minced
- 9 ounces beef, thinly sliced against the grain
- 2 1/2 tablespoons oyster sauce
- 1 tablespoon light soy sauce
- 1 teaspoon dark soy sauce
- 1/2 teaspoon white pepper
- 1 teaspoon white sugar
- 1/2 onion, chopped
- 4 ounces large chili peppers, Thai prik chi fa, sliced
- 3 green onions, roughly chopped
Instructions
- Thoroughly stir together the cornstarch and water in a mixing bowl until smooth.
- Heat the oil in a wok over high heat and quickly sear the sliced beef until just cooked on the outside.
- Reduce the heat to medium, add the minced garlic, and sauté until golden and fragrant.
- Stir in the cornstarch mixture, dark soy sauce, light soy sauce, oyster sauce, white pepper, and white sugar. Mix well and let the sauce simmer briefly with the beef.
- Add the sliced chilies and chopped onion. Cook until the vegetables reach your desired tenderness, then stir in the green onions near the end. Serve immediately with rice.
