- 4 cups chicken stock
- 1 cup bean sprouts, rinsed

- 2 tbsp fish sauce
- 1 tsp soy sauce
- ½ tsp white pepper
- A handful of Chinese celery or cilantro leaves
- Fried garlic (optional, for garnish)
Instructions
- Heat oil in a pot, add minced garlic, and fry until golden. Remove and set aside for garnish.
- Pour chicken stock into the same pot and bring to a gentle boil.
- Add sliced chicken, fish sauce, soy sauce, and white pepper. Cook until the chicken is tender.
- Add bean sprouts and cook briefly, about 1–2 minutes, to keep them crisp.
- Taste and adjust seasoning if needed.
- Ladle soup into bowls, top with Chinese celery or cilantro, and sprinkle fried garlic on top.

- Use chicken thighs instead of chicken breast for a juicier texture.
