A creamy and comforting Thai-inspired coconut chicken soup with tender chicken, rice noodles, and vibrant herbs.


Ingredients

  • 2 cups chicken breast, sliced
  • 2 cups coconut milk
  • 2 cups chicken broth
  • 150 grams rice noodles
  • 1 cup mushrooms, sliced
  • 1 red chili, sliced
  • 1 lime, cut into wedges
  • 2 tablespoons green onions, chopped
  • 2 tablespoons fresh cilantro
  • 2 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce

Instructions

  1. Heat a large pot over medium heat.
  2. Add coconut milk and chicken broth, stir gently.
  3. Add garlic and ginger and let simmer.
  4. Add chicken, mushrooms, and chili slices.
  5. Simmer for 15 minutes until chicken is cooked.
  6. Add rice noodles and cook until tender.
  7. Stir in soy sauce and lime juice.
  8. Serve with green onions and cilantro.
