- 2 cups chicken breast, sliced
- 2 cups coconut milk
- 2 cups chicken broth
- 150 grams rice noodles
- 1 cup mushrooms, sliced
- 1 red chili, sliced
- 1 lime, cut into wedges
- 2 tablespoons green onions, chopped
- 2 tablespoons fresh cilantro
- 2 garlic cloves, minced
- 1 tablespoon ginger, grated
- 2 tablespoons soy sauce
Instructions
- Heat a large pot over medium heat.
- Add coconut milk and chicken broth, stir gently.
- Add garlic and ginger and let simmer.
- Add chicken, mushrooms, and chili slices.
- Simmer for 15 minutes until chicken is cooked.
- Add rice noodles and cook until tender.
- Stir in soy sauce and lime juice.
- Serve with green onions and cilantro.
Notes
- Add lime juice at the end for best flavor
- Do not overcook noodles
