Description

A refreshing Thai dessert drink made with creamy coconut milk, chewy tapioca pearls, and sweet jackfruit.


Ingredients

  • 1 cup small tapioca pearls
  • 2 cups coconut milk
  • 1/3 cup sugar
  • 1/4 teaspoon salt
  • 1 cup jackfruit (sliced)
  • 4 cups water
  • 1 cup ice cubes

Instructions

  1. Bring water to a boil in a saucepan.
  2. Add tapioca pearls and stir to prevent sticking.
  3. Simmer until pearls become translucent.
  4. Drain and rinse pearls under cold water.
  5. Mix coconut milk, sugar, and salt until combined.
  6. Add pearls to serving glasses.
  7. Top with jackfruit and ice cubes.
  8. Pour coconut milk mixture over and serve chilled.

Notes

  • Chill coconut milk before serving for best taste
  • Rinse pearls well to avoid sticking
