A refreshing Thai dessert drink made with creamy coconut milk, chewy tapioca pearls, and sweet jackfruit.
Ingredients

- 1 cup small tapioca pearls
- 2 cups coconut milk
- 1/3 cup sugar
- 1/4 teaspoon salt
- 1 cup jackfruit (sliced)
- 4 cups water
- 1 cup ice cubes
Instructions
- Bring water to a boil in a saucepan.
- Add tapioca pearls and stir to prevent sticking.
- Simmer until pearls become translucent.
- Drain and rinse pearls under cold water.
- Mix coconut milk, sugar, and salt until combined.
- Add pearls to serving glasses.
- Top with jackfruit and ice cubes.
- Pour coconut milk mixture over and serve chilled.
Notes
- Chill coconut milk before serving for best taste
- Rinse pearls well to avoid sticking
- Adjust sweetness to preference
