Ingredients

- 4 cups chopped kale
- 2 cups cooked chicken, shredded or sliced
- 1 cup shredded purple cabbage
- 1 cup julienned carrots
- 1 small red chili pepper, sliced
- 3 tablespoons creamy peanut butter
- 2 tablespoons lime juice
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 2 to 3 tablespoons water
Instructions
- Prepare all ingredients by chopping kale, slicing vegetables, and cooking chicken if needed.
- In a small bowl, mix peanut butter, lime juice, soy sauce, honey, garlic, ginger, and water until smooth.
- In a large bowl, add kale, cabbage, carrots, and chili.
- Add the chicken on top of the vegetables.
- Pour the dressing over the salad.
- Toss everything together until evenly coated.
- Taste and adjust seasoning if needed, then serve fresh.
