A fresh and vibrant kale salad with tender chicken and a creamy Thai-inspired dressing that blends tangy, sweet, and savory flavors in every bite.


Ingredients

Scale
  • 4 cups chopped kale
  • 2 cups cooked chicken, shredded or sliced
  • 1 cup shredded purple cabbage
  • 1 cup julienned carrots
  • 1 small red chili pepper, sliced
  • 3 tablespoons creamy peanut butter
  • 2 tablespoons lime juice
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 2 to 3 tablespoons water

Instructions

  1. Prepare all ingredients by chopping kale, slicing vegetables, and cooking chicken if needed.
  2. In a small bowl, mix peanut butter, lime juice, soy sauce, honey, garlic, ginger, and water until smooth.
  3. In a large bowl, add kale, cabbage, carrots, and chili.
  4. Add the chicken on top of the vegetables.
  5. Pour the dressing over the salad.
  6. Toss everything together until evenly coated.
