Ingredients

- 3 cups cooked jasmine rice
- 1 cup diced chicken breast
- 2 large eggs
- 1/2 cup diced carrots
- 1/2 cup peas
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 2 tablespoons vegetable oil
- 1/4 cup chopped green onions
Instructions
- Heat a wok or large pan over medium high heat.
- Add oil and sauté garlic until fragrant.
- Add diced chicken and cook until fully done.
- Push chicken aside and scramble the eggs in the same pan.
- Add carrots and peas, then stir fry briefly.
- Add cooked rice and mix everything together.
- Pour in soy sauce and fish sauce, stir well to coat.
- Finish with green onions and serve hot.
Notes
- Use day old rice for best texture
- Cook on high heat for better flavor
- Adjust seasoning to taste
