- 1 1/4 cups or 10 oz fresh ground beef or finely sliced beef
- 1 tablespoon fish sauce
- 1/2 teaspoon MSG
- 1/2 tablespoon toasted rice powder
- 1 1/2 teaspoons chili flakes
- 2 tablespoons cilantro, finely chopped
- 2 green onions, finely chopped
- 1/2 teaspoon salt
- 1 1/2 tablespoons beef bile (optional)
- 2 tablespoons beef blood (optional)
- 2 tablespoons culantro, finely chopped
- 1/4 cup or 1.5 oz beef intestines, finely sliced (optional)
Instructions
- Finely slice the beef intestines into very thin pieces and set aside.
- Slice the beef against the grain into thin strips, then cut each strip at an angle into paper-thin slices for tenderness.
- Place the sliced beef into a mixing bowl and add beef blood if using, salt, MSG, fish sauce, chili flakes, toasted rice powder, and beef bile.
- Mix gently until the seasoning is evenly distributed and the beef is well coated.
- Add chopped green onions, cilantro, culantro, and mint, then gently fold everything together.
- Serve immediately while fresh.
