Description

A comforting bowl of creamy coconut broth, tender chicken, and fragrant rice infused with Thai red curry flavors.


Ingredients

  • 1 cup jasmine rice
  • 2 chicken breast, sliced
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 2 cups chicken broth
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 lime, cut into wedges
  • 1 handful fresh cilantro
  • 1 red chili, sliced
  • Salt to taste
  • 1 tablespoon oil

Instructions

  1. Heat a pan and prepare a pot for broth.
  2. Combine coconut milk, broth, curry paste, garlic, and ginger.
  3. Heat oil in pan.
  4. Sear chicken until golden and slice.
  5. Simmer broth and add rice and chicken.
  6. Add lime juice and garnish.
  7. Serve warm.

  • Use full-fat coconut milk for best flavor
  • Add lime at the end
