- 1 cup jasmine rice
- 2 chicken breast, sliced
- 1 can coconut milk
- 2 tablespoons red curry paste
- 2 cups chicken broth
- 3 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 lime, cut into wedges
- 1 handful fresh cilantro
- 1 red chili, sliced
- Salt to taste
- 1 tablespoon oil
Instructions
- Heat a pan and prepare a pot for broth.
- Combine coconut milk, broth, curry paste, garlic, and ginger.
- Heat oil in pan.
- Sear chicken until golden and slice.
- Simmer broth and add rice and chicken.
- Add lime juice and garnish.
- Serve warm.

- Use full-fat coconut milk for best flavor
- Add lime at the end
