Description

A comforting and flavorful soup combining tender chicken wontons with a rich Thai red curry coconut broth and fresh greens.


Ingredients

  • 250 g ground chicken
  • 20 wonton wrappers
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 tbsp red curry paste
  • 400 ml coconut milk
  • 3 cups chicken broth
  • 2 cups bok choy, chopped
  • 2 green onions, sliced
  • 1 tbsp lime juice

Instructions

  1. Mix ground chicken, garlic, ginger, soy sauce, and sesame oil in a bowl.
  2. Place filling into wonton wrappers and seal tightly.
  3. Heat a pot and add red curry paste, coconut milk, and chicken broth, stirring until smooth.
  4. Bring to a gentle simmer.
  5. Add wontons and cook for 5 minutes until tender.
  6. Add bok choy and cook briefly until softened.
  7. Stir in lime juice and garnish with green onions before serving.

Notes

  • Do not boil aggressively to prevent wontons from breaking.
  • Adjust curry paste to control spice level.
  • Best served fresh but can be stored for up to 3 days.
