- 250 g ground chicken
- 20 wonton wrappers
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 2 tbsp red curry paste
- 400 ml coconut milk
- 3 cups chicken broth
- 2 cups bok choy, chopped
- 2 green onions, sliced
- 1 tbsp lime juice
Instructions
- Mix ground chicken, garlic, ginger, soy sauce, and sesame oil in a bowl.
- Place filling into wonton wrappers and seal tightly.
- Heat a pot and add red curry paste, coconut milk, and chicken broth, stirring until smooth.
- Bring to a gentle simmer.
- Add wontons and cook for 5 minutes until tender.
- Add bok choy and cook briefly until softened.
- Stir in lime juice and garnish with green onions before serving.
Notes
- Do not boil aggressively to prevent wontons from breaking.
- Adjust curry paste to control spice level.
- Best served fresh but can be stored for up to 3 days.
