Description

A creamy, spicy and comforting Thai Tomato Soup made with tomatoes, coconut milk, aromatics and red curry paste for a flavorful and easy homemade meal.


Ingredients

  • 1/2 onion, diced
  • 4 cloves garlic, bruised
  • 1 tbsp oil
  • 1 tbsp red curry paste
  • 500 g tomatoes
  • 1/2 Thai chili
  • 1 bouillon cube
  • 350 ml water
  • 60 ml coconut milk

Instructions

  1. Bring a pot of water to a boil and add the whole tomatoes. Cook until skins loosen, then remove and peel once cool enough to handle.
  2. Heat the oil in a pot over medium heat. Add the diced onion, garlic and Thai chili. Sauté until soft and fragrant.
  3. Stir in the red curry paste and cook for 1 to 2 minutes until aromatic.
  4. Add the peeled tomatoes, water and bouillon cube. Simmer for about 15 minutes until the tomatoes break down.
  5. Use an immersion blender to blend the soup smooth or blend in batches in a regular blender.
  6. Return to low heat and stir in the coconut milk gently without boiling.
  7. Ladle into bowls and garnish with fresh coriander before serving.

Notes

  • Use ripe tomatoes for the best flavor.
  • Adjust chili amount to control spice level.
  • Do not boil after adding coconut milk to avoid separation.
  • Add a splash of lime or salt at the end to balance flavor.
