Description
A creamy, spicy and comforting Thai Tomato Soup made with tomatoes, coconut milk, aromatics and red curry paste for a flavorful and easy homemade meal.

- 1/2 onion, diced
- 4 cloves garlic, bruised
- 1 tbsp oil
- 1 tbsp red curry paste
- 500 g tomatoes
- 1/2 Thai chili
- 1 bouillon cube
- 350 ml water
- 60 ml coconut milk
Instructions
- Bring a pot of water to a boil and add the whole tomatoes. Cook until skins loosen, then remove and peel once cool enough to handle.
- Heat the oil in a pot over medium heat. Add the diced onion, garlic and Thai chili. Sauté until soft and fragrant.
- Stir in the red curry paste and cook for 1 to 2 minutes until aromatic.
- Add the peeled tomatoes, water and bouillon cube. Simmer for about 15 minutes until the tomatoes break down.
- Use an immersion blender to blend the soup smooth or blend in batches in a regular blender.
- Return to low heat and stir in the coconut milk gently without boiling.
- Ladle into bowls and garnish with fresh coriander before serving.
Notes
- Use ripe tomatoes for the best flavor.
- Adjust chili amount to control spice level.
- Do not boil after adding coconut milk to avoid separation.
- Add a splash of lime or salt at the end to balance flavor.
