Description

Warm, golden bananas coated in a light coconut sesame batter and cooked in the air fryer until lightly crisp outside and creamy inside.


Ingredients

  • 4 medium firm ripe bananas, peeled and halved lengthwise
  • 1/2 cup rice flour
  • 1/4 cup all-purpose flour
  • 1/4 cup unsweetened finely shredded coconut
  • 2 tablespoons granulated sugar
  • 1 tablespoon white sesame seeds
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup coconut milk
  • 1/2 teaspoon vanilla extract
  • 1 to 2 teaspoons neutral oil spray

Instructions

  1. Preheat the air fryer to 350°F for 3 minutes.
  2. In a mixing bowl, whisk together rice flour, all-purpose flour, shredded coconut, sugar, sesame seeds, baking powder, and salt.
  3. Add coconut milk and vanilla extract, then whisk until a thick but spoonable batter forms.
  4. Line the air fryer basket with perforated parchment if using, then lightly coat it with oil spray.
  5. Dip each banana half into the batter and let the excess drip off gently.
  6. Place the coated bananas in a single layer in the air fryer basket without touching.
  7. Lightly spray the tops with oil and air fry at 350°F for 8 to 10 minutes.
  8. Flip gently, spray again if needed, and cook for 3 to 5 more minutes until golden and lightly crisp.
  9. Let the bananas rest for 2 minutes before serving warm.

Notes

  • Use ripe but firm bananas so they hold their shape while cooking.
  • Do not overcrowd the air fryer basket, cook in batches if needed.
  • Serve right away for the best lightly crisp texture.
