- 4 medium firm ripe bananas, peeled and halved lengthwise
- 1/2 cup rice flour
- 1/4 cup all-purpose flour
- 1/4 cup unsweetened finely shredded coconut
- 2 tablespoons granulated sugar
- 1 tablespoon white sesame seeds
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup coconut milk
- 1/2 teaspoon vanilla extract
- 1 to 2 teaspoons neutral oil spray
Instructions
- Preheat the air fryer to 350°F for 3 minutes.
- In a mixing bowl, whisk together rice flour, all-purpose flour, shredded coconut, sugar, sesame seeds, baking powder, and salt.
- Add coconut milk and vanilla extract, then whisk until a thick but spoonable batter forms.
- Line the air fryer basket with perforated parchment if using, then lightly coat it with oil spray.
- Dip each banana half into the batter and let the excess drip off gently.
- Place the coated bananas in a single layer in the air fryer basket without touching.
- Lightly spray the tops with oil and air fry at 350°F for 8 to 10 minutes.
- Flip gently, spray again if needed, and cook for 3 to 5 more minutes until golden and lightly crisp.
- Let the bananas rest for 2 minutes before serving warm.
Notes
- Use ripe but firm bananas so they hold their shape while cooking.
- Do not overcrowd the air fryer basket, cook in batches if needed.
- Serve right away for the best lightly crisp texture.
- Add cinnamon, honey, or coconut ice cream for extra flavor.
