Description

A flavorful mix of savory chicken, sweet pineapple, and perfectly seasoned fried rice that comes together quickly for a satisfying meal.


Ingredients

  • 3 cups cooked jasmine rice
  • 2 cups diced chicken thighs
  • 1 cup pineapple chunks
  • 2 large eggs
  • 3 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 1 cup diced red bell pepper
  • 1 cup sliced green onions
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat a large skillet or wok over medium high heat.
  2. Add oil and cook chicken until golden and fully cooked.
  3. Push chicken aside and scramble the eggs.
  4. Add garlic and vegetables, stir briefly.
  5. Add rice and mix well.
  6. Stir in soy sauce and pineapple, cook until heated through.
  7. Add green onions, season, and serve warm.
