- 2 cups diced chicken thighs
- 1 cup pineapple chunks
- 2 large eggs
- 3 tablespoons soy sauce
- 3 cloves garlic, minced
- 1 cup diced red bell pepper
- 1 cup sliced green onions
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat a large skillet or wok over medium high heat.
- Add oil and cook chicken until golden and fully cooked.
- Push chicken aside and scramble the eggs.
- Add garlic and vegetables, stir briefly.
- Add rice and mix well.
- Stir in soy sauce and pineapple, cook until heated through.
- Add green onions, season, and serve warm.
