- 4 medium ripe but firm bananas, sliced lengthwise
- 1 cup all-purpose flour

- 3/4 cup cold water
- 1 teaspoon vanilla extract
- Vegetable oil for frying
Instructions
- Heat about 2 inches of vegetable oil in a deep skillet or saucepan to 350°F.
- In a mixing bowl, whisk together the flour, cornstarch, baking powder, salt, and half of the cinnamon.
- Add cold water and vanilla extract, whisking until smooth.
- Line a plate with paper towels for draining.
- Dip each banana slice into the batter until fully coated.
- Carefully fry the bananas in batches for 2 to 3 minutes per side until golden brown and crispy.
- Transfer to the paper towel-lined plate.
- Mix the remaining cinnamon with sugar in a shallow bowl.
- Toss the warm fried bananas gently in the cinnamon sugar mixture.
- Serve immediately while warm and crispy.
