Description

Soft and chewy coconut-coated mochi filled with a creamy Thai tea center. This homemade dessert combines tropical coconut flavor with rich aromatic tea notes for an irresistible bite-sized treat.


Ingredients

  • 1 cup glutinous rice flour
  • 1/4 cup granulated sugar
  • 3/4 cup whole milk
  • 1 tablespoon neutral oil
  • 2 tablespoons Thai tea mix
  • 1/2 cup heavy cream
  • 3 tablespoons sweetened condensed milk
  • 1/4 cup cornstarch
  • 1 cup unsweetened coconut flakes

Instructions

  1. Prepare a tray lightly dusted with cornstarch.
  2. In a microwave-safe bowl, whisk together glutinous rice flour, sugar, milk, and oil until smooth.
  3. Microwave in short intervals, stirring between each interval until the dough becomes thick and stretchy.
  4. In another bowl, whip heavy cream, Thai tea mix, and condensed milk until thick and creamy. Chill briefly.
  5. Flatten portions of mochi dough and place a small scoop of filling in the center.
  6. Seal the dough carefully into smooth balls.
  7. Roll each mochi ball in coconut flakes until fully coated.
  8. Chill for 20 minutes before serving.

Notes

  • Dust hands lightly with cornstarch to prevent sticking.
  • Chill the filling before assembling for easier wrapping.
  • Store leftovers in an airtight container in the refrigerator.
  • Freeze individually wrapped mochi for longer storage.
