  • 1/2 cup plain breadcrumbs
  • 1/2 cup grated Parmesan cheese, divided
  • 1 large egg
  • 4 cloves garlic, minced and divided
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/3 cup chopped sun-dried tomatoes
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons fresh basil, chopped, plus extra for garnish

Instructions

  1. In a large bowl, mix the ground chicken, breadcrumbs, 1/4 cup grated Parmesan cheese, egg, 2 minced garlic cloves, onion powder, Italian seasoning, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until just combined. Shape into 16 to 18 meatballs.
  2. Heat the olive oil in a large skillet over medium heat. Add the meatballs and brown them for 6 to 8 minutes, turning gently so they color on several sides.
  3. Transfer the browned meatballs to a plate. In the same skillet, melt the butter, then add the remaining 2 cloves of minced garlic and cook for about 30 seconds until fragrant.
  4. Stir in the chicken broth, heavy cream, chopped sun-dried tomatoes, red pepper flakes, the remaining 1/4 cup Parmesan cheese, the remaining 1/2 teaspoon salt, and the remaining 1/4 teaspoon black pepper.
  5. Return the meatballs to the skillet. Reduce the heat to medium-low and simmer for 10 to 12 minutes, or until the meatballs are fully cooked through and the sauce has thickened slightly.
  6. Stir in the chopped basil. Serve hot over pasta, rice, or mashed potatoes, with extra basil for garnish if desired.

Notes

  • Mix the meatball mixture gently to keep the texture tender.
  • Use freshly grated Parmesan for the smoothest sauce.
  • Reheat leftovers over low heat with a splash of broth or cream if the sauce thickens too much.
