- 1/2 cup plain breadcrumbs
- 1/2 cup grated Parmesan cheese, divided
- 1 large egg
- 4 cloves garlic, minced and divided
- 1 teaspoon onion powder

- 1 teaspoon salt, divided
- 1/2 teaspoon black pepper, divided
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 cup chicken broth
- 1 cup heavy cream
- 1/3 cup chopped sun-dried tomatoes
- 1/4 teaspoon red pepper flakes
- 2 tablespoons fresh basil, chopped, plus extra for garnish
Instructions
- In a large bowl, mix the ground chicken, breadcrumbs, 1/4 cup grated Parmesan cheese, egg, 2 minced garlic cloves, onion powder, Italian seasoning, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until just combined. Shape into 16 to 18 meatballs.
- Heat the olive oil in a large skillet over medium heat. Add the meatballs and brown them for 6 to 8 minutes, turning gently so they color on several sides.
- Transfer the browned meatballs to a plate. In the same skillet, melt the butter, then add the remaining 2 cloves of minced garlic and cook for about 30 seconds until fragrant.
- Stir in the chicken broth, heavy cream, chopped sun-dried tomatoes, red pepper flakes, the remaining 1/4 cup Parmesan cheese, the remaining 1/2 teaspoon salt, and the remaining 1/4 teaspoon black pepper.
- Return the meatballs to the skillet. Reduce the heat to medium-low and simmer for 10 to 12 minutes, or until the meatballs are fully cooked through and the sauce has thickened slightly.
- Stir in the chopped basil. Serve hot over pasta, rice, or mashed potatoes, with extra basil for garnish if desired.

- Mix the meatball mixture gently to keep the texture tender.
- Use freshly grated Parmesan for the smoothest sauce.
- Reheat leftovers over low heat with a splash of broth or cream if the sauce thickens too much.
