Description

A bright Thai-inspired pineapple fried rice with fluffy jasmine rice, juicy pineapple chunks, extra toasted cashews, colorful vegetables, eggs, herbs, and a savory curry-soy seasoning.


Ingredients

  • 3 cups cooked jasmine rice, chilled
  • 1 cup pineapple chunks, fresh or canned and drained
  • 3/4 cup raw cashews
  • 1/2 cup red bell pepper, diced
  • 1/2 cup carrot, diced small
  • 1/3 cup yellow onion, finely diced
  • 2 cloves garlic, minced
  • 3 green onions, sliced
  • 2 large eggs, lightly beaten
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon curry powder
  • 2 tablespoons vegetable oil
  • 1 tablespoon lime juice
  • 2 tablespoons fresh cilantro, chopped
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper

Instructions

  1. Heat a large skillet or wok over medium-high heat for 1 to 2 minutes.
  2. In a small bowl, stir together soy sauce, sesame oil, curry powder, salt, and black pepper.
  3. Add 1 tablespoon vegetable oil to the hot pan. Add cashews and toast for 2 to 3 minutes, stirring often, until lightly golden. Transfer to a plate.
  4. Add the remaining 1 tablespoon vegetable oil to the pan. Stir in onion, carrot, and red bell pepper. Cook for 3 to 4 minutes until slightly tender.
  5. Add garlic and cook for 30 seconds, just until fragrant.
  6. Push the vegetables to one side and pour in the beaten eggs. Scramble until just set.
  7. Add chilled rice and pour in the seasoning mixture. Toss for 3 to 4 minutes until the rice is hot and evenly coated.
  8. Stir in pineapple chunks, toasted cashews, and green onions. Cook for 1 to 2 minutes until warmed through.
  9. Add lime juice and cilantro, then toss gently and serve warm.

Notes

  • Use cold cooked rice for the best fried rice texture.
  • Drain pineapple well so the rice does not turn soft.
  • Add pineapple near the end to keep it juicy and fresh.
  • For a gluten free version, use tamari instead of soy sauce.
