Description

A bright and savory fried rice made with chilled jasmine rice, juicy pineapple, fresh ginger, garlic, vegetables, eggs, soy sauce, and a hint of sesame oil.


Ingredients

  • 3 cups cooked jasmine rice, chilled
  • 1 cup pineapple chunks, fresh or canned and drained
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 4 green onions, sliced, whites and greens separated
  • 1 medium carrot, finely diced
  • 1/2 cup frozen peas
  • 2 large eggs, lightly beaten
  • 3 tablespoons low-sodium soy sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt, only if needed after tasting

Instructions

  1. Place a large skillet or wok over medium-high heat and warm it for 2 minutes.
  2. In a small bowl, stir together the soy sauce, sesame oil, black pepper, and salt if using.
  3. Add 1 tablespoon vegetable oil to the skillet. Pour in the beaten eggs and scramble gently until just set, about 1 to 2 minutes. Transfer the eggs to a plate.
  4. Add the remaining 1 tablespoon vegetable oil to the skillet. Stir in garlic, ginger, white parts of the green onions, and diced carrot. Cook for 2 to 3 minutes.
  5. Add the chilled rice and break up clumps with a spatula. Stir-fry for 4 to 5 minutes until the grains are hot and lightly toasted.
  6. Add peas, pineapple chunks, and the sauce mixture. Toss for 2 to 3 minutes until evenly coated and heated through.
  7. Return the scrambled eggs to the skillet and stir gently. Add the green parts of the green onions.
  8. Serve hot in bowls while the rice is fluffy and the pineapple is juicy.

Notes

  • Use chilled rice for the best fluffy texture.
  • Drain and pat pineapple dry if using canned pineapple.
  • Keep the pan hot so the rice fries instead of steaming.
  • Add extra soy sauce only after tasting.
