  • 1 pound boneless skinless chicken thighs, cut into bite-sized pieces
  • 3 tablespoons green curry paste
  • 2 cans (13.5 ounces each) coconut milk
  • 3 cups chicken broth
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 1 medium red chili, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1/2 cup fresh basil leaves
  • 1 tablespoon vegetable oil

Instructions

  1. Heat a large pot over medium heat.
  2. Add vegetable oil, green curry paste, garlic, and ginger. Cook for 1 to 2 minutes until fragrant.
  3. Pour in coconut milk and chicken broth. Stir until smooth.
  4. Add chicken and fish sauce. Stir well.
  5. Simmer gently for 20 minutes.
  6. Add asparagus and continue cooking for 5 minutes.
  7. Stir in lime juice, basil leaves, and sliced red chili.
  8. Taste and adjust seasoning if needed.
