- 1 pound boneless skinless chicken thighs, cut into bite-sized pieces
- 3 tablespoons green curry paste
- 2 cans (13.5 ounces each) coconut milk
- 3 cups chicken broth
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 1 medium red chili, thinly sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 1/2 cup fresh basil leaves
- 1 tablespoon vegetable oil
Instructions
- Heat a large pot over medium heat.
- Add vegetable oil, green curry paste, garlic, and ginger. Cook for 1 to 2 minutes until fragrant.
- Pour in coconut milk and chicken broth. Stir until smooth.
- Add chicken and fish sauce. Stir well.
- Simmer gently for 20 minutes.
- Add asparagus and continue cooking for 5 minutes.
- Stir in lime juice, basil leaves, and sliced red chili.
- Taste and adjust seasoning if needed.
- Serve hot and enjoy.
