- 2 medium boneless skinless chicken breasts, about 1 pound
- 1 large head romaine lettuce, chopped
- 1 large avocado, diced
- 1 cup corn kernels, fresh or thawed frozen
- 1 cup cherry tomatoes, halved
- 1/4 medium red onion, thinly sliced
- 2 tablespoons olive oil, divided
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- 1 small garlic clove, minced
- 3/4 teaspoon salt, divided
- 1/2 teaspoon black pepper, divided
Instructions
- Preheat an outdoor grill or grill pan over medium-high heat until hot.
- In a small bowl, whisk together 1 tablespoon olive oil, lemon juice, Dijon mustard, honey, minced garlic, 1/4 teaspoon salt, and 1/4 teaspoon black pepper to make the dressing.
- In another bowl, coat the chicken with the remaining 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Lightly oil the grill grates or grill pan if needed.
- Place the chopped romaine, corn, tomatoes, avocado, and red onion in a large serving bowl.
- Grill the chicken for 5 to 6 minutes per side, or until the internal temperature reaches 165°F.
- Let the chicken rest for 5 minutes, then slice it into strips.
- Place the sliced chicken over the salad, drizzle with the dressing, and toss gently or serve with the dressing over the top.
- Serve immediately.

- Keep the dressing separate until serving if making ahead.
- Slice the chicken against the grain for the most tender texture.
- Add the avocado just before serving for the freshest appearance.
- Fresh, frozen, or canned drained corn can all be used.
