Description

A fresh and satisfying grilled chicken salad with crisp romaine, creamy avocado, sweet corn, juicy tomatoes, and thinly sliced red onion, all finished with a bright lemon Dijon dressing.


Ingredients

  • 2 medium boneless skinless chicken breasts, about 1 pound
  • 1 large head romaine lettuce, chopped
  • 1 large avocado, diced
  • 1 cup corn kernels, fresh or thawed frozen
  • 1 cup cherry tomatoes, halved
  • 1/4 medium red onion, thinly sliced
  • 2 tablespoons olive oil, divided
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1 small garlic clove, minced
  • 3/4 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided

Instructions

  1. Preheat an outdoor grill or grill pan over medium-high heat until hot.
  2. In a small bowl, whisk together 1 tablespoon olive oil, lemon juice, Dijon mustard, honey, minced garlic, 1/4 teaspoon salt, and 1/4 teaspoon black pepper to make the dressing.
  3. In another bowl, coat the chicken with the remaining 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  4. Lightly oil the grill grates or grill pan if needed.
  5. Place the chopped romaine, corn, tomatoes, avocado, and red onion in a large serving bowl.
  6. Grill the chicken for 5 to 6 minutes per side, or until the internal temperature reaches 165°F.
  7. Let the chicken rest for 5 minutes, then slice it into strips.
  8. Place the sliced chicken over the salad, drizzle with the dressing, and toss gently or serve with the dressing over the top.
  9. Serve immediately.

  • Keep the dressing separate until serving if making ahead.
  • Slice the chicken against the grain for the most tender texture.
  • Add the avocado just before serving for the freshest appearance.
  • Fresh, frozen, or canned drained corn can all be used.
