Description

Ingredients

  • 4 cups cooked brown rice, chilled overnight
  • 1 1/2 cups fresh pineapple chunks
  • 2 large eggs, lightly beaten
  • 1 medium red bell pepper, diced
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 4 green onions, sliced
  • 3 cloves garlic, minced
  • 3 tablespoons low sodium soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 2 tablespoons chopped fresh cilantro
  • 1/2 teaspoon black pepper

Instructions

  1. Heat a large skillet or wok over medium-high heat for about 2 minutes.
  2. Whisk the eggs in a small bowl and prepare all vegetables.
  3. Add olive oil and sesame oil to the skillet. Sauté garlic, carrots, and red bell pepper for 3 to 4 minutes.
  4. Push vegetables to one side of the skillet and scramble the eggs on the empty side.
  5. Add peas and pineapple chunks, stirring gently.
  6. Add chilled brown rice and soy sauce. Stir continuously for 5 to 6 minutes until heated through and lightly toasted.
  7. Stir in green onions, cilantro, and black pepper.
  8. Serve warm and enjoy.
