- 4 cups cooked brown rice, chilled overnight
- 1 1/2 cups fresh pineapple chunks
- 2 large eggs, lightly beaten
- 1 medium red bell pepper, diced
- 1 cup diced carrots
- 1 cup frozen peas
- 4 green onions, sliced
- 3 cloves garlic, minced
- 3 tablespoons low sodium soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon olive oil
- 2 tablespoons chopped fresh cilantro
- 1/2 teaspoon black pepper
Instructions
- Heat a large skillet or wok over medium-high heat for about 2 minutes.
- Whisk the eggs in a small bowl and prepare all vegetables.
- Add olive oil and sesame oil to the skillet. Sauté garlic, carrots, and red bell pepper for 3 to 4 minutes.
- Push vegetables to one side of the skillet and scramble the eggs on the empty side.
- Add peas and pineapple chunks, stirring gently.
- Add chilled brown rice and soy sauce. Stir continuously for 5 to 6 minutes until heated through and lightly toasted.
- Stir in green onions, cilantro, and black pepper.
- Serve warm and enjoy.
