Description

Ingredients

  • 1½ cups jasmine rice
  • 1¾ cups chicken broth
  • 1½ cups pineapple chunks
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 3 large eggs, lightly beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 4 green onions, sliced
  • ½ cup chopped cashews
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Turn the Instant Pot to sauté mode and heat briefly.
  2. Add garlic, carrots, jasmine rice, chicken broth, soy sauce, sesame oil, salt, and pepper. Stir to combine.
  3. Secure the lid and set the valve to sealing.
  4. Cook on high pressure for 4 minutes.
  5. Allow a 10 minute natural release, then carefully release remaining pressure.
  6. Open the lid and stir in pineapple chunks, peas, cooked scrambled eggs, green onions, and cashews.
  7. Mix gently until evenly combined and heated through.
  8. Serve warm and enjoy.
