Description

A light, fragrant Thai-style clear broth made in the Instant Pot with ginger, lemongrass, garlic, herbs, lime, and savory seasonings.


Ingredients

  • 6 cups chicken broth
  • 2 tablespoons fresh ginger, sliced
  • 4 garlic cloves, smashed
  • 2 lemongrass stalks, cut into pieces
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 Thai red chili, sliced
  • 3 green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice

Instructions

  1. Turn on the Instant Pot and select the sauté function.
  2. Add chicken broth, fresh ginger, garlic, lemongrass, fish sauce, soy sauce, and sliced Thai red chili.
  3. Stir gently, making sure the aromatics are submerged in the broth.
  4. Secure the lid and set the valve to sealing.
  5. Pressure cook on high for 15 minutes.
  6. Allow a 10-minute natural release, then carefully release any remaining pressure.
  7. Strain the broth through a fine mesh strainer.
  8. Stir in lime juice, green onions, and fresh cilantro.
  9. Ladle into bowls and serve hot.

Notes

  • Use fresh ginger and lemongrass for the brightest flavor.
  • Add lime juice at the end so the broth stays fresh and vibrant.
  • For extra heat, add another sliced Thai chili.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
