A light, fragrant Thai-style clear broth made in the Instant Pot with ginger, lemongrass, garlic, herbs, lime, and savory seasonings.

- 6 cups chicken broth
- 2 tablespoons fresh ginger, sliced
- 4 garlic cloves, smashed
- 2 lemongrass stalks, cut into pieces
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- 1 Thai red chili, sliced
- 3 green onions, sliced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
Instructions
- Turn on the Instant Pot and select the sauté function.
- Add chicken broth, fresh ginger, garlic, lemongrass, fish sauce, soy sauce, and sliced Thai red chili.
- Stir gently, making sure the aromatics are submerged in the broth.
- Secure the lid and set the valve to sealing.
- Pressure cook on high for 15 minutes.
- Allow a 10-minute natural release, then carefully release any remaining pressure.
- Strain the broth through a fine mesh strainer.
- Stir in lime juice, green onions, and fresh cilantro.
- Ladle into bowls and serve hot.
Notes
- Use fresh ginger and lemongrass for the brightest flavor.
- Add lime juice at the end so the broth stays fresh and vibrant.
- For extra heat, add another sliced Thai chili.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
