Description

A creamy, low-carb coconut milk matcha latte made with unsweetened coconut milk, sifted matcha, vanilla, and keto sweetener. It is smooth, lightly earthy, and ready in just 5 minutes.


Ingredients

  • 1 teaspoon matcha powder, sifted
  • 2 tablespoons hot water
  • 1 cup unsweetened coconut milk
  • 1 to 2 teaspoons keto sweetener, such as monk fruit or erythritol
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon coconut cream, optional
  • 1 cup ice, optional for an iced version

Instructions

  1. Warm your serving mug with hot water for 1 minute, then empty it.
  2. Add sifted matcha powder and hot water to a small bowl.
  3. Whisk until the matcha is smooth, bright, and slightly foamy.
  4. Pour coconut milk into a small saucepan and warm over low heat.
  5. Stir in keto sweetener, vanilla extract, and optional coconut cream.
  6. Heat for 2 to 3 minutes until steamy, but do not boil.
  7. Pour the warm coconut milk into the matcha mixture.
  8. Froth until creamy and smooth.
  9. Serve warm in a glass mug, or pour over ice for an iced version.
