  • 1 can (13.5 ounces) full-fat coconut milk
  • 2 cups cooked shredded chicken
  • 2 tablespoons red curry paste
  • 1 tablespoon avocado oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon fish sauce
  • 2 tablespoons lime juice, freshly squeezed
  • 1 medium zucchini, cut into thin matchsticks
  • 1 small red bell pepper, thinly sliced
  • 1 cup mushrooms, sliced
  • 2 cups baby spinach
  • 2 green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1 small red chili, thinly sliced (optional)
  • Lime wedges, for serving

Instructions

  1. Heat a large soup pot over medium heat for about 1 minute.
  2. Add the avocado oil, then stir in the red curry paste, garlic, and ginger. Cook for 1 to 2 minutes, stirring constantly, until fragrant.
  3. Pour in the chicken bone broth and coconut milk, then stir well. Add the fish sauce, salt, and black pepper.
  4. Add the mushrooms, zucchini, and red bell pepper. Bring to a gentle simmer, then stir in the shredded chicken.
  5. Simmer for 10 to 12 minutes, until the vegetables are tender and the chicken is heated through.
  6. Stir in the baby spinach during the last 1 to 2 minutes so it wilts gently.
  7. Turn off the heat, then add the lime juice, green onions, cilantro, and optional red chili slices. Taste and adjust seasoning if needed.
  8. Ladle into bowls and serve hot with lime wedges.
