- 1 can (13.5 ounces) full-fat coconut milk
- 2 cups cooked shredded chicken
- 2 tablespoons red curry paste
- 1 tablespoon avocado oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon fish sauce
- 2 tablespoons lime juice, freshly squeezed
- 1 medium zucchini, cut into thin matchsticks
- 1 small red bell pepper, thinly sliced
- 1 cup mushrooms, sliced
- 2 cups baby spinach
- 2 green onions, sliced
- 1/4 cup fresh cilantro, chopped
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 1 small red chili, thinly sliced (optional)
- Lime wedges, for serving
Instructions
- Heat a large soup pot over medium heat for about 1 minute.
- Add the avocado oil, then stir in the red curry paste, garlic, and ginger. Cook for 1 to 2 minutes, stirring constantly, until fragrant.
- Pour in the chicken bone broth and coconut milk, then stir well. Add the fish sauce, salt, and black pepper.
- Add the mushrooms, zucchini, and red bell pepper. Bring to a gentle simmer, then stir in the shredded chicken.
- Simmer for 10 to 12 minutes, until the vegetables are tender and the chicken is heated through.
- Stir in the baby spinach during the last 1 to 2 minutes so it wilts gently.
- Turn off the heat, then add the lime juice, green onions, cilantro, and optional red chili slices. Taste and adjust seasoning if needed.
- Ladle into bowls and serve hot with lime wedges.
