- 4 cups cooked jasmine rice, chilled
- 2 cups pineapple chunks
- 1 cup frozen peas
- 1 medium red bell pepper, diced
- 1 cup mushrooms, sliced
- 3 green onions, chopped
- 2 large eggs, lightly beaten
- 3 tablespoons low sodium soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
Instructions
- Heat a large skillet over medium-high heat.
- In a small bowl, combine the soy sauce and sesame oil.
- Add vegetable oil to the skillet and cook the garlic for 30 seconds.
- Add the mushrooms and red bell pepper, then cook for 3 to 4 minutes until slightly tender.
- Push the vegetables to one side of the skillet and add the eggs. Scramble until fully cooked.
- Add the chilled rice and peas. Stir well to combine.
- Pour in the soy sauce mixture and cook for 4 to 5 minutes, stirring frequently.
- Fold in the pineapple chunks and green onions. Cook for 1 to 2 more minutes.
- Serve warm in bowls or in a hollowed pineapple shell if desired.
Notes
- Day-old rice gives the best texture.
- Add pineapple near the end to keep it juicy.
- Store leftovers in the refrigerator for up to 3 days.
- Brown rice can be used as a substitute for jasmine rice.
