- 2 cups glutinous rice flour
- 3/4 cup granulated sugar
- 1 1/2 cups coconut milk
- 1 cup whole milk
- 4 tablespoons unsalted butter, melted
- 2 large eggs
- 2 tablespoons matcha powder
- 3 tablespoons Thai tea mix, brewed strong and cooled
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F. Grease and line an 8×8-inch baking pan with parchment paper.
- In a large bowl, whisk together glutinous rice flour, sugar, and salt.
- Add coconut milk, whole milk, melted butter, eggs, and vanilla extract. Whisk until smooth.
- Divide batter evenly into two bowls.
- Mix matcha powder into one bowl.
- Stir brewed Thai tea into the second bowl.
- Pour alternating scoops of both batters into the prepared pan.
- Use a spatula or knife to gently swirl the batters together.
- Bake for 50 to 55 minutes until the top is set and slightly glossy.
- Cool completely before slicing into squares.
Notes
- Use high-quality matcha for brighter color and smoother flavor.
- Lightly oil the knife before slicing for cleaner cuts.
- Store leftovers in an airtight container for best texture.
- Chilled mochi becomes even chewier the next day.
