Description

Soft and chewy Matcha Thai Tea Swirl Mochi with beautiful green and orange swirls, earthy matcha flavor, creamy Thai tea richness, and a perfectly satisfying texture.


Ingredients

  • 2 cups glutinous rice flour
  • 3/4 cup granulated sugar
  • 1 1/2 cups coconut milk
  • 1 cup whole milk
  • 4 tablespoons unsalted butter, melted
  • 2 large eggs
  • 2 tablespoons matcha powder
  • 3 tablespoons Thai tea mix, brewed strong and cooled
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F. Grease and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, whisk together glutinous rice flour, sugar, and salt.
  3. Add coconut milk, whole milk, melted butter, eggs, and vanilla extract. Whisk until smooth.
  4. Divide batter evenly into two bowls.
  5. Mix matcha powder into one bowl.
  6. Stir brewed Thai tea into the second bowl.
  7. Pour alternating scoops of both batters into the prepared pan.
  8. Use a spatula or knife to gently swirl the batters together.
  9. Bake for 50 to 55 minutes until the top is set and slightly glossy.
  10. Cool completely before slicing into squares.

  • Use high-quality matcha for brighter color and smoother flavor.
  • Lightly oil the knife before slicing for cleaner cuts.
  • Store leftovers in an airtight container for best texture.
