- 4 medium firm ripe bananas, peeled and halved lengthwise
- 1/2 cup full-fat coconut milk
- 3 tablespoons packed light brown sugar
- 1 tablespoon honey
- 1 tablespoon melted coconut oil
- 1 tablespoon fresh lime juice
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 2 tablespoons toasted sesame seeds
- 4 lime slices, for serving
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- In a small saucepan, combine coconut milk, brown sugar, honey, coconut oil, lime juice, vanilla extract, cinnamon, and salt.
- Warm the mixture over low heat for 2 to 3 minutes, stirring until smooth.
- Arrange the banana halves cut side up on the prepared baking sheet, leaving space between each piece.
- Brush the bananas generously with the warm coconut glaze, reserving a little for later.
- Bake for 12 minutes.
- Brush again with glaze, sprinkle with toasted sesame seeds, and bake for another 6 to 8 minutes until golden and glossy.
- Let the bananas rest for 2 minutes, then serve warm with lime slices and any remaining glaze.

- Use firm ripe bananas so they hold their shape while baking.
- For extra coconut flavor, add toasted shredded coconut before serving.
- Serve warm for the best soft, glossy texture.
