Description

Warm oven baked bananas brushed with a glossy coconut glaze, finished with toasted sesame seeds and fresh lime for a sweet Thai-inspired dessert.

  • 4 medium firm ripe bananas, peeled and halved lengthwise
  • 1/2 cup full-fat coconut milk
  • 3 tablespoons packed light brown sugar
  • 1 tablespoon honey
  • 1 tablespoon melted coconut oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 2 tablespoons toasted sesame seeds
  • 4 lime slices, for serving

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a small saucepan, combine coconut milk, brown sugar, honey, coconut oil, lime juice, vanilla extract, cinnamon, and salt.
  3. Warm the mixture over low heat for 2 to 3 minutes, stirring until smooth.
  4. Arrange the banana halves cut side up on the prepared baking sheet, leaving space between each piece.
  5. Brush the bananas generously with the warm coconut glaze, reserving a little for later.
  6. Bake for 12 minutes.
  7. Brush again with glaze, sprinkle with toasted sesame seeds, and bake for another 6 to 8 minutes until golden and glossy.
  8. Let the bananas rest for 2 minutes, then serve warm with lime slices and any remaining glaze.

  • Use firm ripe bananas so they hold their shape while baking.
