Description

Ingredients

  • 3 cups cooked jasmine rice
  • 1 cup pineapple chunks
  • 1/2 cup green peas
  • 1/2 cup diced carrots
  • 2 large eggs
  • 1/2 cup cashews
  • 1/4 cup green onions
  • 2 cloves garlic
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat a large skillet or wok over medium-high heat.
  2. Beat the eggs and set aside.
  3. Add vegetable oil to the pan and sauté garlic until fragrant.
  4. Push garlic aside and scramble the eggs.
  5. Add carrots, peas, and cooked rice, stirring well.
  6. Pour in soy sauce and sesame oil, tossing everything together.
  7. Add pineapple chunks, cashews, and green onions, mixing gently.
  8. Serve warm in a hollowed pineapple bowl.
