- 1/4 cup soy sauce
- 2 tablespoons sesame oil
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons olive oil
- 1 tablespoon fresh lime juice
- 1 teaspoon black pepper
Instructions
- Preheat oven to 425 degrees Fahrenheit and lightly grease a large sheet pan with olive oil.
- In a large bowl, combine jasmine rice, pineapple chunks, bell peppers, peas, garlic, ginger, soy sauce, sesame oil, lime juice, and black pepper.
- Spread the mixture evenly across the prepared sheet pan.
- Scatter scrambled eggs and roasted cashews evenly over the rice mixture.
- Roast for 20 to 25 minutes, stirring halfway through cooking, until rice develops crispy edges and pineapple caramelizes.
- Remove from oven and top with sliced green onions.
- Serve warm with extra lime wedges if desired.
