  • 2 cups fresh pineapple chunks
  • 1 cup diced red bell pepper
  • 1 cup diced yellow bell pepper
  • 1 cup frozen peas
  • 4 green onions, sliced
  • 3 large eggs, scrambled
  • 1 cup roasted cashews
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon black pepper

Instructions

  1. Preheat oven to 425 degrees Fahrenheit and lightly grease a large sheet pan with olive oil.
  2. In a large bowl, combine jasmine rice, pineapple chunks, bell peppers, peas, garlic, ginger, soy sauce, sesame oil, lime juice, and black pepper.
  3. Spread the mixture evenly across the prepared sheet pan.
  4. Scatter scrambled eggs and roasted cashews evenly over the rice mixture.
  5. Roast for 20 to 25 minutes, stirring halfway through cooking, until rice develops crispy edges and pineapple caramelizes.
  6. Remove from oven and top with sliced green onions.
  7. Serve warm with extra lime wedges if desired.
