- 1 pound peeled and deveined shrimp
- 4 cups cold cooked jasmine rice
- 1 1/2 cups fresh pineapple chunks
- 1/2 cup frozen peas
- 1/2 cup diced carrots
- 4 sliced green onions
- 3 cloves minced garlic
- 2 large eggs
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil
- 1/2 teaspoon ground black pepper
- Lime wedges for serving
Instructions
- Heat a large skillet or wok over medium high heat.
- Add vegetable oil and cook shrimp for 2 to 3 minutes per side until pink and lightly golden. Remove and set aside.
- Add garlic, carrots, and peas to the skillet and cook until slightly tender.
- Push vegetables to the side and scramble the eggs in the same skillet.
- Add cold cooked rice and stir well.
- Pour in soy sauce and sesame oil, then cook until rice is hot and lightly crisped.
- Return shrimp to the skillet and gently fold in pineapple chunks and green onions.
- Season with black pepper and serve warm with lime wedges.
