Description

Ingredients

  • 1 pound peeled and deveined shrimp
  • 4 cups cold cooked jasmine rice
  • 1 1/2 cups fresh pineapple chunks
  • 1/2 cup frozen peas
  • 1/2 cup diced carrots
  • 4 sliced green onions
  • 3 cloves minced garlic
  • 2 large eggs
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon ground black pepper
  • Lime wedges for serving

Instructions

  1. Heat a large skillet or wok over medium high heat.
  2. Add vegetable oil and cook shrimp for 2 to 3 minutes per side until pink and lightly golden. Remove and set aside.
  3. Add garlic, carrots, and peas to the skillet and cook until slightly tender.
  4. Push vegetables to the side and scramble the eggs in the same skillet.
  5. Add cold cooked rice and stir well.
  6. Pour in soy sauce and sesame oil, then cook until rice is hot and lightly crisped.
  7. Return shrimp to the skillet and gently fold in pineapple chunks and green onions.
  8. Season with black pepper and serve warm with lime wedges.

Notes

  • Use cold leftover rice for the best texture.
  • Fresh pineapple gives brighter flavor and better texture.
  • Do not overcook the shrimp to keep them tender.
  • Add chili sauce if you want extra heat.
